What you need:
1 cup butter, softened
1 cup granulated sugar
1 large egg
1-1/2 teaspoons vanilla
3 cups all-purpose flour
1-1/4 teaspoons baking powder

What you do:

  1. Beat together butter and sugar until light and fluffy then add the egg and vanilla and mix until combined.
  2. Add the flour and baking powder in intervals.
  3. Don’t worry if the dough looks as if it doesn’t have enough moisture, continue to mix until combined and it will come together once you refrigerate it.
  4. Divide the dough into four equal parts, shape into four disks, wrap with plastic wrap and refrigerate about an hour or until firm.
  5. Preheat oven to 375 F and lightly grease baking sheets or line with parchment paper or a non-stick baking mat.
  6. Roll out dough between two sheets of waxed paper
  7. Cut out the desired shapes with cookie cutters and place on prepared baking sheets.
  8. Bake for 7-8 minutes or until edges just start to turn a golden color.
  9. For softer cookies, do not allow the cookies to take on color.
  10. Remove from oven, let cool for one minute and then transfer to wire rack.
  11. Allow cookie sheet to cool thoroughly before placing uncooked dough on it.
  12. Decorate cookies with Royal Icing or Buttercream Frosting and sprinkles.
